Preparation and cooking time: 2 hours
6 cups coconut milk
2 cups ube halaya
1 can condensed milk
3 cups malagkit rice, soaked in water
salt to taste
Young coconut leaves for wrapping, uncut
1. In a pot, heat coconut milk, condensed milk, and ube halaya. Mix well.
2. Add malagkit rice and season with salt. Stir continuously until almost dry and rice is cooked. Set aside to cool.
3. Clean young coconut leaves and wrap suman with them.
4. In a steamer, add water to the bottom pan and steam suman until coconut leaves change in color.
