Time needed: 30 minutes.

Makes: 12 pieces

½ cup water
½ cup sugar
2 ½ cup all-purpose flour
¼ cup powdered milk
½ tbsp baking powder
½ tsp salt
⅓ cup shortening
½ cup ube jam
1 cup desiccated coconut

Ube Syrup:
⅓ cup water
½ cup sugar
1 tsp ube flavoring


  1. Mix dry ingredients

    In a bowl, whisk flour, powdered milk, baking powder, and salt. 

  2. Prepare wet ingredients

    In another bowl, combine water and sugar. Stir until well dissolved.

  3. Make batter

    Add the vegetable shortening and ube jam. Pour sugar water and mix until well incorporated. Transfer the mixture into the prepared pan. Bake for 20-30 minutes. 

  4. Make ube syrup

    Combine water, sugar, and ube flavoring. Stir until sugar is well dissolved. Set aside.

  5. Assemble

    After baking, allow the cake to cool slightly before cutting into 2-inch bars. Dip each piece into the ube syrup then toss it desiccated coconut.
