Preparation and cooking time: 1 hour


Ingredients:
12 pieces tikoy slices
¼ cup langka, cut into strips
½ cup peanuts, toasted
2 tablespoons sesame seeds, toasted
1½ tablespoons sugar
1½ teaspoons salt
Lumpia wrappers
Oil, for frying

Procedure:
1. In a food processor, blitz the peanuts for a few seconds until a fine crumb. Transfer to a bowl.
2. Add sesame seeds, sugar and salt to the peanuts and mix until well combined. Set aside.
3. Assemble the lumpia. Lay the lumpia wrappers down and place tikoy strips about 1 1/2 inches from the edge of the wrapper. Spread ube jam, sprinkle a bit of the peanut mixture, and add langka slices. Roll and seal. Repeat for remaining ingredients.
4. Fry in oil. Serve with more peanut mixture, or even with a scoop of ice cream on top!
