Strawberry Doughnut

Time needed: 1 hour and 30 minutes.

Makes: 12

Doughnut Dough:
2 1/2 cups all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1/2 cup milk
1/4 cup  butter
1 piece large egg
1 teaspoon vanilla extract
1 tablespoon dry yeast
2-3 Cups oil, for frying

Doughnut Glaze:
4 tablespoons milk
2 cups powdered sugar

Strawberry Filling:
1 1/4 cups water
1/4 cup sugar
1 teaspoon corn starch
2 tablespoons strawberry gelatin
2 packs fresh strawberries, washed and dried

1 cup whipping cream


  1. Prepare dry ingredients

    In a medium-sized bowl, mix flour, sugar, and salt then set aside.

  2. Prepare yeast

    In a separate container, mix together the milk, sugar, and yeast. Allow to sit for 10 minutes. 

  3. Make dough

    Combine dry ingredients, yeast mixture, and egg then mix until a shaggy dough forms. Turn the dough out onto a floured surface and begin kneading to bring the dough together.

  4. Add butter

    Place the butter into the center of the dough and fold it in. begin kneading the butter into the dough and keep kneading until smooth, about 5 – 10 minutes. Rest the dough for 2 hours.

  5. Prepare strawberries

    remove the stems from the strawberries and cut the strawberries into quarters.

  6. Make strawberry filling

    In a small saucepot, combine water, sugar, and corn starch. turn on the heat to medium and whisk continuously until everything is well dissolved and slightly thickened about 3-4 minutes. whisk in the strawberry gelatin and the chopped strawberries. Bring to boil while constantly stirring then remove from heat and set aside.

  7. Cut out doughnuts

    After 2 hours, remove from bowl and sprinkle work surface with flour. Roll out dough with a rolling pin to approximately 1/2-inch thick, then cut into 4-inch circles using a cookie cutter or a mug. Place doughnuts on parchment paper, cover with plastic wrap and allow to rise for 20 minutes. 

  8. Fry

    Heat oil in a saucepan on medium heat. Carefully drop doughnuts 3 at a time into hot oil and fry until golden brown, approximately 4 minutes per side. Remove from oil, allow to drain on paper towels or wire rack. Set Aside.

  9. Make glaze

    Combine milk and powdered sugar in a medium-sized bowl and mix until smooth.

  10. Glaze

     Drop 1 doughnut at a time into the glaze, and toss to fully coat. Allow to drip on a wire rack and repeat until all doughnuts are glazed. Set Aside. 

  11. Make whipped cream

    In a bowl, whisk the chilled cream into firm peaks.

  12. Slice and fill

    Slice the doughnuts in half but not all the way through. Pipe whipped cream along the inner edges and place the strawberry filling in the center.
