Sitaw Singkamas and Papaya Salad

DIFFICULTY: Easy

Makes: 2 servings
Preparation and cooking time: 30 minutes


Ingredients:
2 pieces sitaw, cleaned and cut horizontically into 4” in length
1 piece whole singkamas, cleaned, peeled and sliced into strips (as long as the sitaw)
1 piece whole green papaya, cleaned, peeled and sliced into strips
2 pieces tomatoes sliced into wedges
¼ cup roasted peanuts
1 -2 pieces Red Chilies
2 pieces lime, juiced (about 4 tbsp)
1 tablespoon hibe
3 tablespoons fish sauce
2 tablespoons brown sugar
3 pieces garlic, peeled
OPTIONAL: 4 pieces romaine lettuce leaves

Procedure:

1) Using a mortar and pestle pound first the garlic, chilies, and hibe until you create a coarse paste. Continue pounding while adding the lime juice, brown sugar, fish sauce until the dressing/ sauce is well incorporated.
2) Start adding the papaya and continue to lightly pound so the flesh of the papaya loosens up and then add the sitaw and the tomatoes.
3) Once everything is well incorporated, add the singkamas and toss everything together before pouring everything on a plate lined with lettuce.
