Make salad dressing

Using a mortar and pestle pound first the garlic, chilies, and hibe until you create a coarse paste. Continue pounding while adding the lime juice, brown sugar, fish sauce until the dressing/ sauce is well incorporated.

Add remaining ingredients

Start adding the papaya and continue to lightly pound so the flesh of the papaya loosens up and then add the sitaw and the tomatoes.

Once everything is well incorporated, add the singkamas and toss everything together before pouring everything on a plate lined with lettuce.
