Preparation and cooking time: 15 minutes


4 pieces salted duck egg yolks
¼ cup butter
¼ cup bay leaves
2 cups frozen fries
Salt and pepper to taste
1 teaspoon chili flakes


  1. Separate the yolks of the salted duck eggs. Mash the yolks. Set aside.
  2. In a sauce pan over medium heat, add oil and melt butter. Add mashed salted egg yolks. Mix well with a whisk. Add bay leaves. Season with salt, pepper, and chili flakes. Set aside.
  3. Cook fries. Drain and transfer to a mixing bowl.
  4. Add salted egg yolk sauce to the fries (heat before adding if clumped or hardened). Toss until well incorporated.
