DIFFICULTY: Easy

Makes 8 servings
Preparation and cooking time: 40 minutes


Ingredients:

Fried Chicken:
4 pieces chicken legs
2 pieces chicken wings
2 pieces chicken thighs
Salt and pepper to taste
5 pieces calamansi, juiced
1 cup cornstarch
1 cup flour
1 tablespoon garlic powder (add as desired)
4 pieces eggs
2 cups breadcrumbs

Salted Egg Sauce:
1 1/2 tablespoon olive oil
3/4 cup butter
9 pieces salted egg yolks
1 tablespoon sugar
Salt to taste
1/4 cup all purpose cream
2 pieces laurel leaves

Procedure:

Fried Chicken:
1. Marinate the chicken pieces in salt, pepper, and calamansi juice. Set aside in the refrigerator for about 30 minutes.
2. Mix the cornstarch, flour, and garlic powder in a container. Prepare the eggs by mixing in another container. Likewise, place the breadcrumbs in a separate container.
3. Dredge the chicken pieces in the flour mixture followed by the eggs and then the breadcrumbs. Double coat by placing back the same chicken piece in flour, then eggs, then breadcrumbs. Do the same for the rest of the chicken pieces.
4. Heat a pot with enough cooking oil for frying until hot. Fry the chicken pieces until the coating is golden brown. Allow the chicken pieces to rest for about 20 minutes. Re-fry the chicken pieces in the same oil. Set aside to cool.

Salted Egg Sauce:
1. In a pot, cook the olive oil, butter, salted egg yolks, and sugar. Mix over low heat until combined. Season with salt.
2. Add the cream and laurel leaves. Mix while simmering.
3. Remove from the heat while still mixing. Set aside just until cool then mix until to incorporate ingredients.
4. Serve the sauce with the fried chicken.
