A sweet and enhanced version of our favorite Pork Adobo!

Place the pork belly, coke, vanilla extract, soy sauce, garlic, bay leaves, ginger, black pepper, salt in a pot over medium high heat.

Bring the liquid to a boil then simmer for 30 mins until the pork is tender. Occasionally add water, as needed.

Separate the pork belly from the broth and set aside. Pat the pork dry and let it air dry or chill in the fridge for at least an hour.

After an hour, heat a pan with cooking oil over medium high heat then fry the pork until its crispy. Set aside.

Transfer the sauce into a pot and let it boil. Add vinegar then let it cook for 3-5 minutes. Add the Oyster sauce then simmer until the sauce has thickened, adjust the taste with salt and pepper.

Combine the pork belly with the sauce then transfer to a serving bowl. Garnish with spring onion on top. Serve with rice.
