Prepare eggs

Separate the egg yolks and whites from 2 large eggs into two different bowls.

Make egg yolk mixture

In another bowl, add the egg yolks, milk, sugar, a pinch of salt, vanilla essence, ube flavoring, and vegetable oil then mix well.

Sift dry ingredients

Sift the flour and baking powder into the egg mixture. Mix everything together until smooth with no large lumps, and set aside.

Prepare egg whites

With an electric mixer, start beating the egg whites on medium speed. When the egg whites start to thicken up, add 1 tablespoon of sugar and beat them on medium-high speed for 2-3 minutes or until stiff peaks form.

Fold into pancake batter

Add the meringue to the pancake batter in 3 parts and carefully fold them into the batter until just incorporated, making sure not to deflate.

Prepare pan

Lightly grease a non-stick pan with butter and place a thick ring mold in the center.

Cook pancakes

Pour the pancake batter to fill the mold until halfway. Cover the pan and cook on medium-low heat until the pancake has risen to the top of the mold and the center is jiggly. carefully flip, cover, and cook for another 5 minutes on this side.
