Tocino Kimchi Fried Rice

 200 g tocino
 2 tbsp cooking oil
 ½ white onionchopped
 3 shiitake mushroomschopped
 ¼ cup frozen green peasthawed
 ¼ cup canned corndrained
 3 cups day old rice
 ½ cup kimchisliced thinly
 1 tbsp gojuchang
 1 tbsp doenjang
 saltto season
 ground black pepperto season
 3 fried eggs
 2 tbsp chopped spring onions

Fry the tocino in a wok with cooking oil over medium-high heat. Once the tocino is cooked remove from the wok. Leave about a tablespoon of tocino fat in the wok.

Chop half of the tocino into bits and set them aside.

Using the same wok, pour the cooking oil. Once hot, saute the onions, shiitake mushrooms, green peas, and canned corn for about two minutes.

Add the day-old rice and saute. Add the kimchi, gojuchang, and doenjang. Make sure to spread the flavorings all over the rice.

Season with ground black pepper, to taste. Add the chopped tocino when almost done.

Transfer to rice bowls and serve with cucumber slices and fried egg.
