Tanigue Steak

 3 tanigue steak cut
Marinade
 1 cup soy sauce
 ½ cup calamansi juice
 1 tbsp oyster sauce
 2 tsp paprika
 ½ tsp salt
Velouté Sauce
 3 tbsp unsalted butter
 ¼ cup white oniondiced
 1 tsp fresh or dried thyme
 1 cup fish stock
 3 tbsp all-purpose flour
 2 tsp salt
 1 tbsp white ground pepper
 juice of 1 lemon
Garnish
 2 tbsp chopped spring onions
 2 tbsp fried minced garlic
Make the marinade

Combine the soy sauce, oyster sauce, calamansi juice, paprika, salt, and pepper in a medium-sized bowl.

Marinate the fish

Marinate the tanigue steaks in the mixture for 30 mins hour. Turn the fish over after 15mins for even marination. Pat dry before searing.

Pan sear fish

Heat the cooking oil in a medium pan on high heat then fry tanigue slice for two minutes on each side. Transfer to a plate and set aside.

Make the sauce

In the same pan add butter then saute the white onions until opaque. Stir in the all-purpose flour and cook until all the ingredients are incorporated. Add in thyme, salt, and pepper. Simmer for about three minutes or until the sauce thickens. Squeeze in the lemon juice to finish the sauce.

Pour and serve

Drizzle the sauce on top of the Tanigue steak then garnish with spring onions and fried garlic.
