Combine the luncheon meat and cornstarch

In a pan, fry the luncheon meat until crispy. Set aside

In the same pan, saute the red onion, ginger and tomato paste. Cook until the oil of the tomato paste renders.

Add the water and juice of the pineapple chunks then boil for 1 min. Stir to incorporate everything. Add the white sugar and vinegar then simmer for 5 mins. Thicken the sauce by adding the slurry.

Season with salt and pepper then add the pineapple chunks, green bell pepper and fried luncheon meat.

Serve with rice and garnish with onion leeks.

In a pan, combine all the peanut sauce ingredients. Set aside

Combine the cornstarch and tofu in a bowl.

Fry the tofu until golden brown. Set aside

In a pan, saute the red onion, garlic and mushrooms. Add the peanut sauce and mushroom stock then simmer for three minutes.

Add the fried tofu and mix well to coat the tofu.

In a bowl, combine the ground pork, all-purpose flour, garlic powder, red onions, and egg. Season with salt and pepper then mix.
