Spicy Sinigang Hot Pot Noodles

A hot take on a classic sinigang!

Soup Base
 3 cups water
 ½ kg beef ribscut into pieces
 2 cups tomatoesquartered
 1 ½ cups red onionsliced into wedges
 1 tbsp salt
 ½ cup sampalok paste or sinigang mix
 2 tbsp patis
 1 ½ tbsp TABASCO® Habanero Pepper Sauce
Toppings
 1 pack flat rice noodles
 ½ kg pork bellycut into thin strips
 1 cup radishsliced thin
 2 pcs gabichopped into bite-sized pieces
 1 cup okrasliced in half
 5 pcs tomatoessliced into wedges
 1 cup sitawcut into 2-inch pieces
 1 cup eggplantsliced diagonally
 2 cups kangkongsliced

In a large pot, place water, beef ribs, tomatoes, onions, and salt then bring to a boil. Simmer for about 10 – 15 minutes. Remove scum.

Mix in sampalok paste or sinigang mix, patis, and TABASCO® Habanero Pepper Sauce until well combined. Add more water to adjust the taste if necessary. Bring to a boil and simmer. Remove beef ribs and keep for other preparations or serve with the final dish.

Transfer soup to a serving hotpot over medium-low heat and add flat rice noodles. Add toppings: pork belly slices, radish, gabi, okra, tomatoes, sitaw, eggplants, and kangkong. Simmer until cooked. Serve hot!
