Shrimp and Pineapple Salad

A refreshing salad made with Shrimp and Singkamas!

Shrimp
 300 g shrimppeeled and deveined
 1 tsp paprika
 1 tsp cumin
 1 tsp cayenne pepper
 salt and pepperto taste
 1 tbsp oil
Grilled Pineapples
 1 can pineapple slicessyrup set aside
 1 tbsp oil
Salad
 ½ kg singkamasjulienned
 4 tomatoesjulienned and seeded
 2 large red bell pepperjulienned
 1 large red onionjulienned
 1 romaine lettuce or green curly lettuce chopped
 ¼ cup wansoy
Honey-Calamansi Dressing
 ½ cup calamansi
 ¼ cup white vinegar
 2 tbsp pineapple syrup
 2 tbsp honey
 1 tbsp white sugar
 1 1 1/2 cup oil
 salt and pepperto taste

In a bowl, season the shrimp with paprika, cumin, cayenne, salt and pepper. Set aside

Heat oil in a pan then cook the shrimp for about 2-3 mins. Set aside.

Grilled Pineapple

In same pan, drizzle additional oil then sear both sides of pineapples until its charred.

Chopped into small pieces then set aside.

Honey-Calamansi Dressing

In a small bowl, combine all the sweet calamansi dressing ingredients except for canola oil.

Mix well then gradually add the canola oil while stirring to emulsify the mixture.

Assembly

Place the all the salad ingredients in a salad bowl. Drizzle 4-5 tbsp of Honey calamansi dressing the toss to coat everything. Adjust seasoning with salt and pepper

Top with cooked shrimp and grilled pineapples then serve.
