Rice Cooker Hainanese Chicken

Hassle-free and delicious Hainanese Chicken cooked in a rice cooker!

 1 tbsp canola oil
 2 tbsp gingerthinly sliced
 5 garlic clovessmashed
 1 ½ cups uncooked rice
 2 cups chicken broth
 4 -6 pcs chicken thigh fillet (400-500 g)
 salt and pepper to season
Ginger Sauce
 1 tbsp grated ginger
 ¼ cup canola oil
 2 tbsp sesame oil
 3 tbsp chopped spring onion
 salt and pepper to season
Chicken Rice

Heat oil in the rice cooker. Saute the ginger and garlic until fragrant

Add the rice and chicken stock. Stir to incorporate everything

Place the chicken in the rice cooker and season with salt and pepper.

Cook for 20-30 min or until the rice is cooked

Serve with sambal, ginger sauce and sliced cucumbers

In a bowl combine all the ingredients then season with salt and pepper. Optional: Microwave the sauce for 30 secs before serving
