Pork Binagoongan Fried Rice

This delicious rice dish is enhanced with the savory taste of pork binagoongan.

Pork Binagoongan
 1 tbsp cooking oil
 1 garlic bulbminced
 500 g pork liempo
 ½ cup bagoong
 2 cups water
 1 cup coconut cream
 salt and pepperto season
Bagoong Rice
 1 tbsp cooking oil
 1 tbsp minced garlic
 1 red oniondiced
 1 tsp grated ginger
 4 -5 cooked rice

 1 tbsp bagoongif needed
Garnish
 scrambled eggsliced
 green mango sliced
 tomatoessliced
 cucumbersliced

In a pot, saute the garlic in oil until fragrant.

Add the pork liempo and cook it for 5 mins. Add the bagoong and cook for another 5 min

Add the water then simmer the pork for 30 mins or until the fat renders.

Add the coconut milk then cook for another 20 mins or until it becomes semi-dry. Season with salt and pepper then set aside.

In a pan, saute the garlic, ginger, and red onion in oil until fragrant.

Add the binagoongan and rice then stir until well incorporated. Season with salt and pepper.

Add bagoong if needed. Transfer to a bowl the top with scramble egg, green mango, tomatoes, and cucumber. Serve
