Crispy fried oysters topped with a delectable cream sauce!

 ½ kg small oysters
 3 cups all-purpose flour2 cups for coating and 1 cup for the wet batter
 ½ cup beer
 ½ cup cornstarch
 1 tbsp salt
 1 pc red onionminced
 1 pc red chiliadd more for garnish
 ¼ cup spring onionminced
 1 cup heavy cream
 3 tbsp mayonnaise
 2 tbsp water
 salt and pepperto taste
 2 tbsp knorr liquid seasoning
 2 tbsp calamansi juice
 salt and pepperto season

Coat the oysters in flour seasoned with salt and pepper.

In a bowl, combine the all-purpose flour, cornstarch, beer and salt. Mix well until well combined.

Dip the coated oyster in the batter before frying.

Deep-fry the oysters until golden brown and crispy. Set aside to drain on a paper towel.

In a heated medium-sized pan, cook the red onions until they begin to color. Add the red chili, spring onions, heavy cream, mayonnaise, and water. Stir until everything is combine and let the mixture reduce and thicken, about 5 to 10 minutes.

Season with salt, pepper, and Knorr liquid seasoning. Stir the calamansi juice.

Transfer the fried oysters to a sizzling plate then drizzle with the sauce. Garnish with spring onions, more chili, and calamansi.
