Mango Coconut Cookie

A chunky cookie with dried mango and coconut!

 ½ cup unsalted butterroom temperature
 ½ cup light brown sugarpacked
 ½ cup granulated sugar
 1 pc eggroom temperature
 1 ½ tsp vanilla extract
 2 cups all-purpose flour
 1 tsp baking soda
 1 tsp cornstarch
 ½ tsp salt
 1 cup dried mangoroughly chopped
 ½ cup sweetened flaked coconut or desiccated coconut

In a bowl, sift and combine the all-purpose flour, baking soda, cornstarch, and salt.

In a large bowl, combine butter, brown sugar and granulated sugar. Whisk well to combine. Beat in the egg and vanilla extract until well incorporated.

Add the dry ingredients to the butter mixture and stir until combined. Gently fold in dried mango and desiccated coconuts.

Preheat the oven to 350F/180C. Using ice cream scooper, scoop some cookie dough then place them 2 inches apart on a cookie sheets lined with parchment paper.

Bake for 10 to 12 minutes. Let it cool before serving.
