Manam-Style Watermelon Sinigang

 4 tbsp cooking oil
 1 kg beef short ribs
 1 tbsp garlicminced
 1 white onionchopped
 ½ ripe whole watermeloncut into chunks
 58 native tomatoesquartered
 4 gabipeeled, cut into chunks
 4 cups water
 2 tbsp powdered sinigang mix
 1 bunch sitaw
 1 bunch kangkong
 patisto taste
 ground black pepperto taste

Heat 2 tablespoons of oil in a large pot. Sear beef short ribs. Set aside.

In the same pot use the remaining 2 tablespoons of oil, saute onion and garlic until translucent.

Add the beef, tomatoes, watermelon, gabi, cooked beef and water. Bring to a boil.

Reduce heat to a simmer and cook until beef is tender (about 1-2 hours).

Add sinigang powder mix and sitaw. Simmer until vegetables are cooked.

Add kangkong last. Season with patis and pepper.
