Mac and cheese is one of the most beloved and easy meals you can cook for your kids. Here’s a clever way of making their favorite that the little ones can enjoy anytime, anywhere!
In a pot over medium heat combine the cooked elbow macaroni, milk, cheddar cheese, Parmesan cheese, and butter. Mix everything together and let simmer until thick.
Once the cheese sauce has thicken, add the green peas then season with salt and pepper. Mix in truffle oil, if using. Set aside and let mac and cheese cool.
Cook bacon until crisp. Set aside.
Assemble mac & cheese lumpia: Brush the lumpia wrapper’s edges with egg wash. Add about 2 tablespoons of mac & cheese, a piece of bacon, a cheddar cheese stick and a sprinkling of mozzarella cheese.
Roll the lumpia twice to secure filling, fold sides, roll completely, and secure with egg wash.
Deep fry lumpia until golden brown. Blot off extra oil with paper towels. Serve warm.
