A flavorful Lechon Baka to impress your family and friends!

Beef Marinade
 1 cup soy sauce
 2 tbsp knorr seasoning
 ½ cup calamansi juice
 1 tbsp garlic powder
 1 tbsp onion powder
 ½ tbsp ground black pepper
 2 tsp salt
 ½ tbsp sugar
 4 pcs labuyo
Beef Plate
 2 kg beef plate
 salt and pepperto season
 2 cups beef stock
Roast Beef Sauce
 4 tbsp roast beef oil
 4 tbsp all-purpose flour
 2 cups beef stock
 2 pcs bay leaf
 ¼ cup roast beef au jus
 saltto taste
 pepperto taste

In a bowl, combine all the marinade ingredients then mix well.

In a shallow pan, place the beef plate and season with salt and pepper. Add the marinade then let the beef marinate for at least 6 hours to overnight.

Add the beef stock in the baking pan.

Cover the baking pan with aluminom foil then cook in a preheated oven at 375°F for an 1 hour 30 mins.

Remove the foil then add more stock if the liquid has dried out. Cook the beef uncovered for another hour or until the beef is tender. Occasionally add more stock if the liquid dries out.

Remove from the oven and let it rest for at least 20 minutes before serving. Save the Au jus for the roast beef sauce. Serve with the Roast Beef Sauce and roasted vegetables.

Roast Beef Sauce

In a sauce pan, add the roast beef oil and all purpose flour. Cook for 5 mins or until it turns into a brown roux.

Slowly add in the beef stock, while stirring the sauce to avoid lumps. Drop the bay leaves and pour au jus. Boil the sauce for 3 minutes then simmer for another five minutes or until the sauce thickens.

Season with salt and pepper then discard the bay leaves. Serve with the litson baka.

Roasted Vegetables

In the shallow pan used for the roast beef, add the vegetables then drizzle with the au jus. Mix well to coat the vegetables. Roast for 20 mins or until the potatoes are tender. Serve
