Langka Paksiw

 3 tbsp oil
 10 large garlic clovessmashed and roughly chopped
 2 medium red onionsliced
 saltto taste
 ground black pepper
 1 kg unripe langkachopped, and shredded
 4 bay leaf
 ½ cup vinegar plus more as needed
 ¼ cup soy sauce
 1-2 Tbsps brown sugar
 1 cup water/vegetable broth /pork broth
 ¾ cup lechon sauce(optional)

In a large pan over medium heat, sauté the garlic, onion, and langka in oil for a few minutes, until the langka begins to soften.

Add bay leaves and season with salt and pepper. Cook for about 10 minutes. Add vinegar and bring to a boil. Simmer until the acidic smell disappears. Add the water or vegetable/pork broth, soy sauce, and brown sugar.

Stir and simmer until most of the liquid has reduced by half.
