Katmon Jam

Slice katmon to reveal the fruit center.

Place katmon in a pot with water and let simmer until katmon fruit is tender.

Add the sugar and the salt and continue to simmer until sugar has dissolved, mash fruit. Simmer until it turns into a jam consistency.

Make sure that bottles are sterilized by pouring hot water on bottles and letting them air dry before using them.

Once the jam is done, pour it into bottles, seal it tightly, and store it in the chiller.
