 3 tbsp oil
 1 kg beef shank / bulalo cut
 3 tbsp garlicminced
 ½ cup red onionssmall dice
 1 tbsp gingersliced
 ½ cup tomatoesmedium dice
 8 cups pork broth
 3 pcs lemongrass stalk bulbsmashed
 7 pcs batwan fruit
 1 pcs siling haba
 1 cup jackfruitunripe, sliced
 ½ tbsp annatto powder
 salt and ground black pepperto taste

Season beef shanks with salt and pepper.

In a large pot over medium heat, sear the shanks in oil until browned on all sides. Remove from pan.

In the same pot, saute onion, garlic, ginger, and tomatoes for a few minutes. Return beef shanks to the pot.

Pour in pork broth, add lemongrass, batwan, and siling haba. Bring to a boil and simmer until beef is tender. Add more water if needed.

Add jack fruit and annatto powder. Simmer for a few more minutes. Season with salt and pepper if needed.
