Kababayan Bread

 1 ½ cups all-purpose flour
 ½ cup brown sugar
 ½ tsp baking soda
 1 ½ tsp baking powder
 ½ tsp salt
 ½ cup vegetable oil
 ¾ cup milk
 2 eggs
 2 tbsp vanilla essence
 2 tbsp melted butter
 3 tbsp icing sugar
Prepare dry ingredients

In a bowl, combine the flour, brown sugar, baking soda, baking powder, and salt. Mix well until everything is well incorporated.

Prepare wet ingredients

Using a separate bowl, mix the wet ingredients including milk, oil, eggs, and vanilla essence. Mix everything together until well combined.

Make the batter

Sift the dry ingredients into the milk-egg mixture. Mix until the batter becomes smooth and creamy, with no more visible lumps.

Portion and bake

Using an ice cream scooper or cup, scoop equal portions of the mixture into each greased muffin pan. Bake in an oven preheated to 180°C for 15-20 minutes or until it turns golden brown and the toothpick comes out clean from the thickest part. Be careful not to overbake.
