Inadobadong Manok From Bicol

In a palayok, brown the native chicken, garlic, then add onion, and ginger until the chicken renders its fat.

Add pepper, lemongrass, and vinegar, allow to boil. Do not stir until the vinegar smell has disappeared.

Season with salt, and add coconut cream. Allow simmering for a few more minutes.

Serve hot.
