A sweet, succulent pork dish!

Heat oil in a pot, sear the pork belly until browned and the fats have rendered. Set aside the pork.

In the pot, saute the garlic, red onion and bay leaves until fragrant.

Place back the pork belly then pour the vinegar, soy sauce, and water .

Cover the pot and simmer the pork for 40-50 mins until tender. Add water if needed

Remove the cover then add the banana blossom, fermented black beans and brown sugar. Simmer the stew until the sauce thickens.

Season to taste with salt and pepper.

Transfer to a serving bowl and serve with rice
