

Season the liempo slices with salt and pepper. Set aside.

In a pan over medium heat, sear the liempo for a few minutes until golden. remove from pan and set aside.

In the same pan, sauté the onions, garlic, black beans, and bay leaf for a few minutes.

Add soy sauce, vinegar, banana blossoms, pineapples, and water. Bring to a boil.

Put the liempo slices and simmer for 10 mins, add sugar cover and let it boil till tender.

In a separate pot, boil bok choy for 2-3 mins and then rinse with cold water.

Place bok choy leaves and lettuce on steamed cuapao. Add humba slices, banana blossom, black beans, and mayo.
