Honey Walnut Shrimp

 20 pieces shrimppeeled and deveined
 1 cup water
  cup sugar
 ½ cup walnut
 1 tbsp butter
 4 pieces egg whites
  cup cornstarch
 ¼ cup mayonnaise
 2 tbsp honey
 1 tbsp sweetened condensed milk
 1 cup vegetable oil for frying
 scallions, for toppings
Caramelize nuts

In a pan over medium heat, add the water, sugar, and walnuts and caramelize. Add the butter and stir. transfer candied walnuts to a dish tray lined with parchment paper. Let dry.

Make sauce

In a bowl, combine the honey, mayonnaise, and sweetened condensed milk then whisk to combine.

Make batter

Whisk the egg whites until they are foamy then add the cornstarch and continue whisking until well combined.

Coat shrimp

Add the shrimp to the batter using a fork or chopstick to pick up 1 shrimp at a time. Make sure to coat the shrimp well.

Fry

In a medium-sized pot over medium heat, heat the oil and fry shrimps until golden brown.

Coat in sauce

Add the fried shrimp to the sauce and coat with a large spoon. 

Mix in nuts

Add the candied walnuts and serve with steamed rice.
