Crispy Kangkong With Mayo Sinigang Dip

 1 pc eggbeaten
 1 cup rice flour
 1 cup cornstarch
 salt and ground black pepperto taste
 1 cup ice-cold water
 2 bunches kangkongleaves picked
 oilfor frying

 ¾ cup mayonnaise
 1 tbsp olive oil
 1 pc calamansi
 ½ tsp patis
 ½ tbsp sinigang mix

Combine egg, rice flour, and cornstarch in a bowl until well combined. Season with salt and pepper, and mix well.

Whisk in cold water until well combined.

Heat oil in a large pan over high heat.

Dip the kangkong in the batter, making sure to coat well.

Deep fry in oil for a few minutes until golden and crispy.
