Creamy Salted Egg Macaroni Salad

Salted Egg Sauce
 1 ½ cups butter
 2 cups mashed salted egg yolks
 3 tbsp sugar
 4 ½ cups LADY’S CHOICE MAYONNAISE
 5 tsp calamansi juice
Assembly
 6 cups elbow macaroni noodlescooked
 1 ½ cups finely diced tomatoes
 1 cup finely diced red onion
 2 cups chopped salted eggs
 2 cups chopped lettuce
 2 ½ cups shredded roast chicken

Melt butter in a pan over medium heat.

Mix in mashed salted egg yolks until well combined into a sauce. Remove from heat.

Add LADY’S CHOICE MAYONNAISE and calamansi juice. Mix until well combined. Set aside in a bowl.

Assembly

Cook noodles in salted water as stated in package instructions. Drain noodles and set aside to cool.

In a large bowl, mix together cooked macaroni noodles, tomatoes, onions, salted eggs, lettuce, and roast chicken until everything are evenly distributed.

Add salted egg mayonnaise and mix until well combined. Serve cold.
