Creamy Mushroom and Chicken Pie

A delicious and flavorful chicken pie to make your holiday extra special!

 1 tbsp oil
 1 red onionchopped
 1 garlic bulbminced
 1 tsp dried rosemary
 1 tsp dried thyme
 1 carrotdiced
 500 g chicken thigh or breast fillets
 1 canned mushroom
 1 canned green peas
 1 cup all purpose cream
 1 chicken cube
 4 large potatoespeeled and diced
 1 tbsp unsalted butter
 ½ cup bread crumbs

In a pot, saute red onions and garlic. Add the rosemary and thyme then saute until the herbs are fragrant.

Stir in the carrots and cook for 2 mins.

Add the chicken and cook for 3-5 mins.

Stir in the mushrooms and green peas the cook for another 3 mins.

Add the all-purpose cream and chicken cube then simmer for 10 mins. Season with salt and pepper then transfer ot an oven bake container

In a separate pot, boil the potatoes until tender.

Transfer the potatoes in a food processor then blend until smooth. Add the butter and mix well. Season with salt and pepper.

Top the mashed potatoes on the mushroom chicken. Make sure to evenly cover the chicken.

Top with the breadcrumbs then bake for 5-10 mins on a 400F oven or until the breadcrumbs turns brown. Serve
