Chicken Liver & Tofu Sisig

 1 tbsp cooking oil
 1 tbsp butter or margarine
 2 garlicpeeled and chopped
 1 red onionminced
 1 green chilichopped
 1 red chilichopped
 1 tbsp mayonnaise
 ¼ cup soy sauce
 2 calamansi deseeded and juiced
 ¼ cup chicken liversliced into bitesized pieces
  cup chicken gizzards and heartsliced into bitesized pieces
 1 egg
 4 firm tofucut into cubes and deep fried
Marinate

Take your chicken innards and marinate it in soy sauce and calamansi.

Sauté

In a pan heat oil and melt butter on medium heat. Sauté garlic and half of the chopped red onions, green and red chilies.

Cook chicken innards

Pour in the marinated chicken innards and saute until cooked. This will only take about 5 minutes.

Mix in remaining ingredients and assemble

Crack in the egg and saute until egg is cooked. Take out from the heat, mix in the deep fried tofu, mayonnaise and garnish with spring onions (and more chilies to taste).
