Chicken & Egg Sandwich

A classic egg and chicken sandwich!

Boiled Chicken
 ½ part chicken breastfillet
 ¼ cup diced red onions
 1 pc bay leaf
 ½ tsp black peppercorns
 ¼ cup celery leavesdiscard
 ½ l water
Salad
 ½ cup chicken strips
 3 pcs eggsBoiled and mashed/diced
 1 tbsp minced white onions
 1 tbsp minced celery stalk
 1 tbsp chopped spring onions
 ½ cup mayonnaise
 1 tsp mustard
 ½ tsp salt
 ¼ tsp ground black pepper
Boiled chicken

In a pot combine chicken breast, black peppercorns, bay leaf, celery leaves, and red onions and let simmer for about 10 – 12 minutes or until breast if cooked all the way through. Strain chicken from the stock and set aside chicken and broth in separate bowls.

Flake chicken.

Mix all salad ingredients together
