 35 quail eggs
 1 cup all-purpose flour
 ½ cup mozarella cheese
 ½ cup melting cheese
 3 beaten eggs
 cooking oilfor deep frying
 garlic aoili(optional, for plating)
 thousand island dressing(optional, for plating)
Kwek-kwek Batter
 1 cup all-purpose flour
 ½ cup cornstrarch
 1 cup water
 2 tbsp annato powder
 ½ tbsp salt
 1 tsp black pepper
 ½ tbsp grated garlic

In a pot, place the quail eggs and fill with water. Turn on high heat until it boils. Lower the heat then cook the eggs for 3-5 mins. Transfer the eggs to a bowl with ice water. Let it cool for 5 mins then peel the eggs and set aside.

Combine the mozzarella and melting cheese. Set aside.

For the kwek-kwek batter, combine all the ingredients in a bowl then mix until well incorporated.

Coat the eggs one by one in flour then dip in the beaten egg. Coat with the cheese mixture then dip in the batter.

Deep fry for 2-3 mins. Strain excess oil before serving.
