Cheesy Bopis Rice

Cheese sauce
 2 tbsp butter
 2 tbsp garlicgrated
 1 cup cream
 1 cup cheesegrated
 1 cup mozzarellagrated
 1 tbsp mustard
 salt and ground black pepper to taste
Rice
 2 tbsp oil
 2 tbsp garlicminced
 1 cup red bell pepperchopped
 ½ cup spring onionschopped diagonally
 1 ½ cups leftover bopis
 2 cups ricecooked
 salt and ground black pepper to taste
Topping
 egg, sunny side up
Cheese Sauce

In a pan, melt butter and saute garlic for a few minutes. Add cream and melt cheeses. Mix in mustard and season with salt and pepper to taste. Set aside and keep warm.

Rice

In a pan, saute garlic, bell peppers, and spring onions in oil for a few minutes. Add bopis.

Mix in rice and cook for a few minutes. Season if necessary.

Mound rice and top with egg. Pour cheese sauce around rice.
