Pizzas are considered to be one of the most greasy and rich dishes we love. But what if we can make a gluten-free, guilt-free version of this Italian classic? Introducing the Cauliflower Pizza: a delicious creation you can indulge in!

Cauliflower Crust
 2 cauliflower florets
 ½ cup shredded mozarella cheese
 1 large egglightly beaten
 ½ tsp salt
 ½ oregano
 salt and ground black pepperto season
Malunggay Pesto
 ½ cup malunggay leaves
 ¼ cup fresh basil leaves
 2 tbsp grated parmesan cheese
 3 tbsp roasted cashew nuts
 ½ tsp minced garlic
 ½ cup extra virgin olive oil
 salt and ground black pepperto season
Toppings
 ½ cup shredded mozarella cheese
  cup crumbled kesong puti
 ¼ cup malunggay leaves
 ¼ cup basil leaves
Cauliflower Crust

Make cauliflower rice in food processor. After, microwave on high for 8 minutes until cooked.

Place the cauliflower rice in a tea towel and twist it to squeeze out as much moisture as you can.

Transfer the cauliflower to a mixing bowl and add mozzarella, egg, oregano, sea salt and pepper.

Using your hands or a spatula, press the mixture and shape into a thin pizza “disc”onto a baking sheet lined with parchment paper liberally applied with olive oil.

Malunggay Pesto

Blend all ingredients for the malunggat pesto until smooth.

Assembly

Top crust with malunggay pesto, mozzarella cheese, kesong puti and malunggay leaves. Season with salt and pepper. Bake in the oven for another ten minutes or until cheese has melted.
