Bistek-Stuffed Upo

A healthy baked upo with beef!

 1 pc upocut into 2-inch long cylinders
 ½ tbsp spanish paprika
 1 tbsp soy sauce
 2 tbsp calamansi juice
 500 g beef tenderloinsmall diced
 2 tbsp olive oil
 1 garlic bulbminced
 1 cup red onionjulienned
 1 tsp dried thyme
 1 cup shitake mushroomchopped
 2 large red bell pepper

 1 ½ cups cheddar cheese

Scrape the insides of the upo then set aside the scrapings.

Boil water in a pot then place the upo cylinders, boil for 3-5 minutes. Don’t over-boil the upo since we don’t want it to be soft and mushy. Transfer to a baking pan then season with salt and pepper. Set aside

In a bowl, combine the spanish paprika, soy sauce, calamansi juice and beef tenderloin. Season with salt and pepper then marinate for at least 1 hour. Set aside

After marinating, save the marinade then in a pan with oil, sear the beef tenderloin. Do it in batches to avoid steaming the beef. Once done searing, set aside.

In the same pan, saute the garlic and red onions for 3 mins. Add the dried thyme and cook for another minute.

Place the mushrooms in the pan and cook for 1 minute. Add the marinade then cook for 2 minutes.

Place the seared tenderloin back in the pan and add the red bell peppers. Stir to incorporate everything then cooked for another minute. Set aside

Scoop about 1-2 tbsp of the steak mixture into the upo. Top with cheddar cheese then broil for 5 minutes or until the cheese melts. Serve
