Alugbati Salad

A healthy Alugbati salad that's appetizing and delectable.

Salad Dressing
 ¼ cup rice vinegar
 3 tbsp calamansi juice
 ½ cup canola oil
 2 tbsp honey
 1 tsp white sugar
 ½ tbsp fish sauce
 ½ tbsp oyster sauce
 1 tsp sesame oil
 salt and pepperto taste
Salad
 2 bunch alugbati
 ¼ cup chopped cashew nuts
 2 red onionchopped
 1 cucumberchopped
 3 pcs salted eggsliced
 ¼ cup kesong puti

Combine all the ingredients in a blender or food processor. Mix until well combined. Season with salt and pepper

Combine the Alugbati, cashew nuts, red oion and cucumber in a bowl.

Drizzle about 4-6 tbsp on the salad then toss. Make sure everything is coated.

Transfer to a serving bowl then topped with salted egg and kesong puti. Optional drizzle some toasted sesame seeds.
