Preparation and cooking time: 1 hour
Ingredients:
4 tablespoons cooking oil
6 pieces liempo, seasoned with salt and pepper
5 cloves garlic, thinly-sliced
1 whole onion, sliced
2 tablespoons bagoong
1 cup tomato sauce
½ cup olive oil
Kalabasa slices, enough to make one layer
3-inch sitaw pieces, enough to make one layer
Talong slices, enough to make one layer
Ampalaya slices, enough to make one layer
Sigarilyas slices, enough to make one layer
Kamote slices, enough to make one layer
Okra slices, enough to make one layer
Spinach leaves, enough to make one layer
1 cup chicken stock
Zucchini slices, enough to make one layer
Tomato slices, enough to make one layer
Procedure:
- Preheat your oven at 250 degrees Celsius.
- Heat up some oil in a medium sized pan and pan fry seasoned liempo pieces until golden brown. Set aside.
- In the same pan where you cooked your liempo, add more oil and saute garlic and onion together until soft. Add bagoong and tomato sauce. Set aside the tomato bagoong sauce.
- In an oven-safe baking dish, layer the following in this order: (1/4 cup) olive oil, liempo, kalabasa, sitaw, talong, ampalaya, sigarilyas, kamote, okra, spinach, chicken stock, zucchini, and kamatis.
- Season with salt and pepper. Drizzle with ¼ cup olive oil and finish off with the tomato bagoong sauce.
- Bake at 250 degrees Celsius for 40 to 60 minutes.
