Makes 5 to 10 servings
Preparation and cooking time: 45 minutes
5 pieces crabs (alimasag)
6 cloves garlic, chopped
1 piece red onion, chopped
1 cup gata
1/4 cup alamang
1 2-inch piece ginger, grated
1/2 piece small red bell pepper, sliced into strips
1/2 piece small green bell pepper, sliced into strips
1 cup buko meat, cut into strips
2 pieces siling labuyo, minced
Pepper and sugar to taste
1. Boil alimasag in water until colour changes. Set aside and remove meat and set aside head shells.
2. Saute garlic, ginger, red onion, alamang, and siling labuyo. Mix in gata. Simmer until thick. Set aside.
3. Add crab meat and buko and season with pepper. You may season with sugar according to your liking.
4. Fill the crab shells with the meat mixture and top with bell peppers. Wrap in banana leaves and broil or grill until banana leaves are charred.
