Pan-Seared Chicken And Apples Macaroni Salad


Makes 6 servings
Preparation time: 30 minutes


¼ kilo chicken thigh fillet
3 tablespoons garlic, peeled and minced
2 tablespoons soy sauce
2 pieces calamansi, juiced
2 tablespoons margarine
1/8 teaspoon black pepper ground
1 tablespoon cooking oil
470ml Lady’s Choice Real Mayonnaise
400 grams macaroni pasta, cooked
1 tablespoon white onions, finely chopped
2 pieces stalks, celery, minced
1 piece fuji apple cored and cut into chunks
1 cup romaine lettuce, roughly chopped
2 pieces calamansi, juiced
1 teaspoon white sugar
salt and pepper to taste


  1. In a bowl, mix together garlic, soy sauce, calamansi.

  3. Marinade, season with pepper. Let sit in the ref for about 30 minutes.
  4. Take a pan/ skillet and place it on medium heat. Pour oil and add the margarine to melt.
  5. Take the marinated chicken fillets and pan sear and cook for about 8-12 minutes until cooked all the way through.
  6. Flake into strips. Set aside.
  7. In a large bowl, pour in cooked macaroni, prepped chicken strips, white onions, celery, apples, and lettuce.
  8. Pour in the Lady’s Choice Mayonnaise and calamansi juice and toss it all together until well combined.
  9. Season with salt pepper and sugar and toss again to combine all flavors.
  10. Optional: Serve with a side of garlic bread slices
