Spread the love

by Kyzia Maramara

The world-famous New York Cheesecake is great, there’s no doubt about that, but perhaps what could rival its prestige is the Burnt Basque Cheesecake. The cheesecake originated decades ago in San Sebastian, Spain, the Basque region’s capital, where chef Santiago Rivera created the recipe for the La Viña restaurant.

Basque Cheesecakes break all the rules of our definition of what a “cheesecake” should be – it’s burnt, it doesn’t have a crust, and it looks out of this world. But take a slice out of one and you’ll discover why this food trend is here to stay. Here are local bakeries and shops where you can get your fill of the burnt cheesecake.
