Time needed: 1 hour.

Makes: 6 servings / 6 buns

1 1/3 cups bread flour
¼ cup cake flour
1 teaspoon salt
3 tablespoons sugar
¼ teaspoon instant yeast
3½ tablespoons warm milk
1 piece large egg
3½ tablespoons water
2 tablespoons butter, room temperature

Biscuit dough:
¼ cup butter, room temperature
½ cup sugar
1 piece large egg
1½ cups + 2 tablespoons cake flour
½ teaspoon baking powder

  1. Make cookie/biscuit dough

Place butter in a bowl. Add sugar and mix well until it became smooth. Add half of the beaten egg, mix well, and add the remaining egg and mix again. Sift the flour in a bowl and mix it with spatula. Place the dough on a plastic film. Make cylinder shape and place in a fridge for about 30 minutes.

  2. Make bread

Mix the bread flour, egg, milk powder in a bowl and mix well. Add the butter and salt to the same bowl and mix it until it is well combined.

  3. Knead

Place the dough on a big plate, knead, and stretching until the dough become smooth.

  4. Let rise

When you have a nice smooth dough ball, put it into a bowl, cover it with plastic film, and let rise for about 30 minutes.

  5. Punch, portion, and proof

Take out the dough, punch down, and divide into 4 pieces with a scraper. Roll each piece into a ball, let rest for 10 minutes under a damp kitchen towel.

  6. Layer on the cookie dough

Take out the cookie dough and flatten out each piece into a thin round with plastic wrap. Place the Bread dough in the center and turn it upside down. Cover the bread dough with the cookie dough. Put sugar on the surface and lightly score the dough. Cover with wet cloth and leave in a warm place for about 20 minutes.

  7. Bake

Bake at 180 degrees Celcius for 10 minutes first (to make the cookie dough crispy), then lower heat to 160 degrees Celcius and bake for another 12 minutes.
