Mantecado Butterbeer

DIFFICULTY: Easy/Moderate


INGREDIENTS:

Butterscotch: for 2-3 servings depending on your glass
1 cup brown sugar
2 tablespoons water
6 tablespoons butter
3/4 cup cream
1/2 teaspoon cider vinegar
2 tablespoons rum

Butterscotch Cream:
3/4 cup cream
2 tablespoons butterscotch

For Assembly:
1 can root beer
1 shot vodka
2 dollops of butterscotch whipped cream

Mantecado ice cream for topping

PROCEDURE:

  1. Make butterscotch: Melt brown sugar and water together. Let boil and then lower heat. Add butter and cream, and let boil again. Turn off heat, and then add cider vinegar and rum.
  2. Whip together cream and butterscotch to make the butterscotch cream.
  3. Assembly: Butterscotch (about 1/4 cup) > root beer > vodka > butterscotch cream (about 2 dollops) > more root beer > mantecado ice cream (1-2 scoops)

NOTE: The addition of rum and vodka is optional. A non-alcoholic version will be magical, too.
