Mango BBQ Liempo

DIFFICULTY: Easy

Makes 2 to 4 servings
Preparation and cooking time: 45 minutes


Ingredients:

Mango BBQ:
½ kg pork belly slices
½ cup soy sauce
¼ cup tomato paste
1/8 cup calamansi juice
2 pieces ripe mangoes, pureed
¼ cup garlic, minced
½ cup red onions, minced
¾ cup lemon-lime soda
Ground black pepper, to taste
¼ cup brown sugar
¼ cup oil

Mango Salsa:
1 to 2 pieces ripe mangoes, cubed
1/4 cup chopped onions
1/4 cup chopped wansoy
1/4 cup chopped tomatoes
Salt and pepper to taste

Procedure:

Mango BBQ:
1. In a bowl, combine soy sauce, tomato paste, calamansi juice, mango puree, garlic, onion, soda, brown sugar, and ground black pepper until well combined and sugar has dissolved.
2. Completely submerge the pork belly slices in the marinade and allow to marinate for 30 minutes – 1 hour. Remove meat.
3. In a pot over medium heat, bring the marinade to a boil and cook until thickened. Remove from heat
4. Oil up the grill and cook the pork belly slices while continuously basting with the mango bbq sauce glaze and oil. Slice to check for doneness. Serve with mango salsa.

Mango Salsa:
1. Mix ingredients in a bowl. Serve with the cooked liempo slices.
