Makes 5 to 6 servings
Preparation and cooking time: 20 minutes


1/2 cup sugar
1 cup water, divided
1/2 cup brown sugar
1-inch piece ginger, peeled and chopped
1 cup lemon juice
Carbonated water


1. Make simple syrup by combining 1/2 cup sugar and 1/2 cup water in a pot over medium heat. Mix until the sugar dissolves. Set aside.
2. Make salabat by boiling 1/2 cup brown sugar, 1/2 cup water, and the ginger in a pot over medium heat. Stir until fragrant and sugar is dissolved.
3. In a pitcher, place the simple syrup, salabat, and lemon juice. Mix.
4. Pour half of the juice onto serving glasses with ice and top with carbonated water. Serve cold.
