Makes: 4 servings

Ingredients:
3 tablespoons oil
10 pieces large garlic cloves, smashed and roughly chopped
2 pieces medium red onion, sliced
Salt, to taste
Ground black pepper
1 kilo langka, unripe, chopped, and shredded
4 pieces bay leaf
½ cup vinegar, plus more as needed
¼ cup soy sauce
1 – 2 tablespoons brown sugar
1 cup water/vegetable/pork broth
¾ cup Lechon sauce (OPTIONAL)

Procedure:

  1. Saute

    In a large pan over medium heat, saute the garlic, onion, and Lanka in oil for a few minutes, until the langka begins to soften. 

  2. Season

    Add bay leaves and season with salt and pepper. Cook for about 10 minutes. Add vinegar and bring to a boil. Simmer until the acidic smell disappears. Add the water or vegetable/pork broth, soy sauce, and brown sugar.

  3. Simmer

    Stir and simmer until most of the liquid has reduced by half.
