Humba Cuapao

Time needed: 45 minutes.

Makes: 4 servings

4 pieces cuapao buns, steamed
1 bundle bok choy, small
1 bundle lettuce, small, leaves separated
2 tablespoons oil
1 piece pork liempo, 600g
4 pieces garlic cloves
1 piece medium onion
1/4 cup soy sauce
1/4 cup vinegar
2 cups water, plus more as needed
1 tablespoon peppercorns
2 pieces bay leaves
1/4 cup dried banana blossom
1/4 cup black beans/tausi
1/2 cup pineapple tidbits
3 tablespoon brown sugar
Salt, to taste
Ground black pepper, to taste


  1. Prepare Pork

    season the liempo slices with salt and pepper. set aside.

  2. Sear Pork

    In a pan over medium heat, sear the liempo for a few minutes until golden. remove from pan and set aside.

  3. Saute

    in the same pan, saute the onions, garlic, black beans, and bay leaf for a few minutes.

  4. Make humba sauce

    Add soy sauce, vinegar, banana blossoms, pineapples, and water. Bring to a boil.

  5. Simmer pork humba

    put the liempo slices and simmer for 10 mins, add sugar cover and let it boil till tender.

  6. Boil vegetables

    In a separate pot, boil bok choy for 2-3 mins and then rinse with cold water.

  7. Assembly

    Place bok choy leaves and lettuce on steamed cuapao. Add humba slices, banana blossom, black beans, and mayo.
