Honey Calamansi Mojito



1 tablespoon Hot water
1 tablespoon honey
Juice from 8 pieces calamansi
12 mint leaves
1 shot of Manille Liqueur de Calamansi
1 shot of Bacardi white rum
¼ cup soda water
¼ cup ice cubes
2 pieces whole calamansi for topping


  1. Make honey simple syrup: Mix 1 tablespoon of honey and 1 tablespoon of hot water. Set aside.
  2. Dip the tip of your glass in calamansi juice and then into sugar colored with red food coloring.
  3. Place 12 pieces of mint leaves at the bottom of the glass. Add the honey syrup and the juice of 8 pieces of calamansi. Muddle together using a muddler or the back of a spoon.
  4. Add calamansi liqueur, white rum, soda water and ice cubes. Stir lightly.
  5. Garnish with calamansi halves.
